Best Fried Catfish Fillets with Country Remoulade and Beer Batter Hushpuppies

Best fried catfish fillets ingredient:
-          Dijon mustard whole grain 1 cup
-          Hot sauce 1 tbsp
-          Egg white 1 pcs beaten lightly
-          Catfish fillets 4 pcs
-          Canola oil 4 cups
-          Yellow cornmeal ½ cup
-          Flour all purpose ½ cup
-          Salt
-          Black pepper
Country remoulade ingredient:
-          Mayonnaise 1 cup
-          Chives 1 tbsp chopped
-          Lemon juice 1 tbsp
-          Dijon mustard whole grain 1 tbsp
-          Hot sauce ½ tsp
-          Green onion 2 pcs take the white parts then chopped finely
-          Celery 1 stalk chopped finely
-          Garlic 1 cloves chopped finely
-          Salt
-          Black pepper

Beer batter hushpuppies ingredient:
-          Canola oil 4 cup
-          Yellow cornmeal 2 cup
-          Baking powder 2 tsp
-          Cayenne pepper a pinch
-          Salt
-          Black pepper
-          Beer 1 cup
-          Egg 2 pcs
-          Onion 1 pcs chopped finely

Best fried catfish fillets cooking direction:
1.      Take a large size bowl, put inside hot sauce, egg, and mustard. Stir them to mix it all.
2.      Take the catfish fillet and dip into the bowl to coat the surface with the mustard. Flip once then coat the other surface with the mustard. Do this step to the entire catfish fillet.
3.      Cover the bowl then let it sit in the fridge for around 1 hour.
4.      Take a Dutch oven, then pour inside the oil so it will fill around a third of the Dutch oven. Put the Dutch oven over the fire with medium setting; use the deep frying thermometer so it will reach to 350 degree Fahrenheit.
5.      Take a swallow bottom bowl then put flour, pepper, cornmeal and salt inside. Stir to mix them all.
6.      After one hour, take out the bowl from inside the fridge then take out the catfish fillet from the mustard mixture.
7.      Put the catfish fillet in a plate; season the surface with pepper and salt. Flip once then season the other surface with pepper and salt. Do this step to all of the catfish fillets.
8.      Put the catfish fillet on the flour mixture to cover the surface with the flour. Flip once then cover the other surface with the flour. Do this step to all of the catfish fillets.
9.      Put the catfish fillet on the oil then fry it for around two minutes time until it turn golden color. Take the catfish fillet set aside. Do this step to all of the catfish fillets.
Country remoulade cooking direction:
1.      Take a bowl then add the entire ingredient to the bowl, season the mixture with pepper and salt.
2.      Cover the bowl then let it sit in the fridge for around 1 hour.
3.      After one hour, take out the bowl from inside the fridge then taste the flavor. Add more seasoning if necessary.
4.      You can store this country remoulade until 3 days from the making date if you store it inside the fridge on airtight container.
Beer batter hushpuppies cooking direction:
1.      Take a Dutch oven, and then pour inside the oil. Put the Dutch oven over the fire with medium setting; use the deep frying thermometer so it will reach to 375 degree Fahrenheit.
2.      Take a large bowl, put inside some of the ingredient such as cayenne pepper, baking powder; cornmeal and salt for 1 tsp. stir them all to mix.
3.      Take another bowl then put inside the liquid ingredient such as onion, egg, and beer. Season with pepper and salt. Whisk to smooth.
4.      Pour the second bowl to the first bowl while stirring to mix.
5.      Use ice cream spoon to take the batter mix then put it on the oil to fry around 3 minutes until it turn golden. Take out and set aside. Do this step until all of the batter is fried.
Serving direction:
-          Take the fried catfish fillets and hushpuppies put on plate. Add the country remoulade on the side. Serve immediately.
